Does gluten-free taste different?
Only the imitations do. Naturally gluten-free food tastes identical; gluten-free bread, pasta and beer taste measurably different.

Why
Three separate things are happening, and people usually blame the wrong one.
1. Texture, not taste, is the main difference. Gluten is the viscoelastic network that traps fermentation gas, lets dough expand during proving, and then sets against gelatinised starch during baking to form the crumb. Nothing else does all four jobs. Remove it and you get the familiar complaints: dense, crumbly, dry, a crumb that shatters rather than tears. In sensory studies of gluten-free scones, moistness, cohesiveness and inner softness were the attributes that drove acceptability up, while "thick throat sensation" and "stuffiness" drove it down. Those are mouthfeel words, not flavour words.
2. The aroma chemistry genuinely changes. This is the part most explanations miss. Research comparing volatile profiles found wheat bread carried 41 volatile compounds and wheat–rye bread 54, while gluten-free bread carried only 33. The missing ones matter: gluten-free breads lacked pyrazines and 2-acetyl-1-pyrroline, the compounds most responsible for the smell of baked bread crust. Gluten proteins participate in the Maillard reaction with sugars during baking, so removing them removes precursors, not just structure. Meanwhile gluten-free loaves showed elevated methional, which smells of boiled potato, a specific, identifiable off-note rather than a vague absence.
The same study demonstrated the mechanism by fixing it: adding proline and glucose to the dough as a Maillard precursor pair produced bread with markedly improved aroma, and in consumer testing with celiac participants, 80% preferred the breads made with the added precursors. The flavour gap is chemistry, and it is addressable.
3. The base flours bring their own flavours. Rice flour is neutral but slightly gritty and gives a darker crumb from rice pigment, with a paler crust because there is less Maillard browning to do. Buckwheat is earthy and assertive. Sorghum is faintly bitter. Chickpea flour is beany. Almond flour reads sweet and eggy, sensory panels found higher almond flour levels produced higher "eggy flavour," and more oat bran fibre correlated with "earthy flavour." None of these are wrong; they are just not wheat.
Where the difference is smallest. Anything where wheat was structural but not the flavour: soy sauce swapped for tamari, a roux thickened with cornflour, a sauce, a soup, breaded chicken with a rice-crumb coating. Anything where wheat was the flavour (a baguette, a real pizza base, a wheat beer), is where the gap is honest and wide.
What this means in practice
If you have just been diagnosed: the first six weeks are the worst, and the worst of the worst is bread. Almost everyone tries the supermarket own-brand loaf, recoils, and concludes gluten-free food is bad. It isn't; that loaf is. Buy the frozen premium loaves, toast everything, and give it a month, flavour expectation recalibrates faster than people expect.
Toasting is not a workaround, it is the intended use. Most commercial gluten-free bread is formulated to be heated. Toasting drives Maillard browning in the slice itself, which partly replaces the crust volatiles the loaf never developed, and it firms a crumb that is otherwise gummy. Several manufacturers say so on the packet.
Freshness windows are much shorter. Without gluten's moisture-management role, staling is fast. A gluten-free loaf that was fine on day one can be sawdust on day three. Freeze in slices, toast from frozen, this single habit fixes more complaints than switching brands does.
Cooking from scratch closes the gap much faster than shopping does. The best gluten-free eating is naturally gluten-free cuisine, not gluten-free imitation: Thai, Mexican with corn tortillas, Indian with rice and gram flour, Japanese with rice and tamari. None of it tastes "gluten-free" because none of it is trying to.
For people without celiac disease: if you are eating gluten-free by choice and finding the food worse, that is a real observation, not a failure of willpower. There is no established health benefit to a gluten-free diet in people without celiac disease or wheat sensitivity, so there is nothing to trade the flavour for.

One caveat from the same literature: too much sourdough tips into a sharp, sour off-note.
- Seeded and legume-blended loavesAdding up to 14% whole chia flour to rice-flour bread produced hedonic scores of 7.9–8.7 on a 10-point scale, comparable to both white gluten-free and wheat counterparts.

Does gluten have a taste? Barely. On its own it is described as chalky, like cornstarch, with a stringy mouthfeel. Its contribution to flavour is indirect, via texture, and via Maillard reactions during baking.
Why does gluten-free bread taste sweet? Rice, tapioca and potato starch are rapidly digestible and read sweeter on the palate than wheat flour, and many formulations add sugar or honey to help browning and yeast activity.

Does gluten-free pasta taste different? Rice and corn pasta tastes flatter and has a narrower cooking window before it turns soft. Legume pastas taste distinctly of the legume. Salt the water hard, undercook by a minute, and finish in the sauce.
Is gluten-free food getting better? Yes, measurably. Sourdough fermentation, Maillard precursors, enzyme use, legume and seed blends and hydrocolloid science are all active research areas, and the 2015 aroma-precursor result, 80% of celiac tasters preferring the modified loaf, shows the gap is technical rather than permanent.
