The mechanism in one line. Wheat flour is roughly 70% starch and 10–13% protein, and a good chunk of that protein is gluten. Take gluten out and the formulator has to replace it with something that behaves like a network: white rice flour, tapioca starch, potato starch, corn starch, plus a hydrocolloid. Every one of those replacements is more starch-dense than the flour it replaced and carries less protein and less fibre. The carbohydrate does not go down. The protein goes down.

The gluten-free entry is higher on carbohydrate, higher on calories, and carries roughly half the protein of ordinary wheat pasta and under a third of the fibre of wholewheat. Part of the carbohydrate difference is water: gluten-free pasta absorbs less during cooking, so 100 g of it is more dry matter. That is a real caveat, but it works against the swap, not for it, because you eat a plate of pasta by volume, not by dry weight.
Dry, per 100 g, the same pattern holds: dry wheat pasta runs about 371 kcal and roughly 75 g carbohydrate, while a branded corn-and-rice gluten-free pasta lists 368 kcal per 100 g and 50 g carbohydrate per 63 g serving, about 79 g per 100 g, with 1 g of fibre.
Bread, per slice
Slice weights vary enough that per-100 g bread comparisons mislead, so these are label figures as sold:

Carbohydrate: a dead heat. Protein: the gluten-free loaves lose, consistently, by roughly half. Scaled up, the 34 g 7-Grain slice works out to about 47 g of carbohydrate per 100 g, squarely in wheat-bread territory, not below it. Schär's Artisan Baker White derives roughly 87% of its calories from carbohydrate.
Pizza base
A store-bought gluten-free crust runs about 24–30 g carbohydrate per eighth of a 12-inch base, at 120–150 calories and 2–4 g protein. One database lists half of a 9-inch gluten-free crust at 31 g total carbohydrate, 30 g net, 179 calories and 2.1 g protein. Ordinary pizza dough lands in the same range. No saving.
What the market surveys find
The single-product numbers are consistent with the category studies. The Norwegian case-control comparison of 423 gluten-free products against 337 matched gluten-containing equivalents found the gluten-free versions higher in carbohydrate, saturated fat and salt, and lower in protein and fibre. The Italian survey of 235 gluten-free versus 349 regular products found lower protein in every one of seven categories tested, at p < 0.001.
The honest exceptions. A 2022 European commercial bread survey found the opposite for bread specifically, gluten-free loaves with more fibre and less carbohydrate, sugar and energy than gluten-containing ones. A Brazilian e-commerce study also found gluten-containing products higher in carbohydrate. And a UK gluten-free food database found no significant difference in energy or carbohydrate, only in protein. So the fair statement is equal or higher, never reliably lower, and lower protein is the finding that replicates everywhere.
What this means in practice
Do not make a swap for carbohydrate reasons. There is no version of this trade that reduces carbohydrate. If you are counting carbs, the gluten-free aisle is the wrong place to be looking, and it costs substantially more per item.
Watch the protein, not the carbs. The replicable finding across three national market surveys is a protein deficit, around 5.8 g/100 g in gluten-free foods versus 8.6 g/100 g in gluten-containing ones in one dataset. If gluten-free staples are a large share of your intake, that adds up. Build protein back in at the plate level rather than expecting the loaf to supply it.
Watch the fibre too. Gluten-free pasta at ≈1.3 g fibre per 100 g against 4.5 g for wholewheat is a meaningful daily difference if pasta is a regular meal.
Portion behaves differently. Gluten-free pasta and bread have shorter satiety per calorie because of the protein and fibre gap, which is one plausible route to the weight gain frequently reported after starting a gluten-free diet.
None of this argues against the diet if you have celiac disease. A gluten-free diet is the only effective treatment for celiac disease and the carbohydrate question is irrelevant to that. It argues against the substitute-heavy version of the diet, which is a different thing.
What to have instead
Swaps that actually improve the numbers rather than shuffling them:
- Banza (chickpea) or Barilla Red Lentil pastaThe best available trade: around 30–35 g carbohydrate per cooked cup, comparable to white wheat pasta, but three to five times the fibre and roughly double the protein. This is the swap worth making regardless of gluten.
