Why
Mezcal is one of the small set of spirits where you do not have to rely on the distillation argument at all. There is no gluten in the ingredients to begin with.
Agave is the entire fermentable. The piñas (the hearts of the agave plant, espadín most commonly, but also tobalá, tepeztate, madrecuishe and dozens more), are roasted in earthen pits lined with hot rock and wood, which is where mezcal gets its smoke. Roasting converts the plant's inulin into fermentable sugars. The cooked agave is then crushed, traditionally under a stone tahona, fermented in open wooden vats with wild yeast, and distilled. Water and agave. Nothing else needs to be added, and no grain is used at any stage.
Both arguments point the same way. Even if a producer used a grain-derived sugar somewhere, distillation would handle it, gluten proteins are non-volatile and stay in the still. Coeliac UK's position is that all spirit drinks are safe on a gluten-free diet because distillation removes any trace of gluten. Mezcal gets to that verdict twice over: nothing to remove, and a process that would remove it anyway.
Beyond Celiac has a dedicated ruling. Their mezcal page states that pure, distilled mezcal, made from the agave plant, is considered gluten-free, with the standard caveats about brands that add flavourings or other additives after distillation and about cross-contact in facilities that also process wheat, barley or rye. Their tequila page says the same, and goes further, even mixto tequila, which is at least 51% agave with other sugars making up the rest, is still considered safe for people with celiac disease. Those added sugars are typically cane-derived.
At least one mezcal carries a formal certification. Mezcal Rosaluna is certified gluten-free by GFCO (the Gluten Intolerance Group's certification programme). That is unusual in the agave category, where most producers simply do not seek certification for a product with two ingredients, but it is there if you want a certified mark rather than a category ruling.
Where the flavour additions happen matters. Pechuga mezcals (distilled a third time with fruit, nuts and a raw poultry breast suspended in the still), look alarming on paper, but everything in them passes through distillation rather than being stirred in afterwards. The bottlings to actually check are the modern flavoured and sweetened ones: mezcal-based liqueurs, cremas, coffee and chocolate expressions, and ready-to-drink mezcal cocktails. Those are post-distillation additions, which is precisely the category Beyond Celiac warns about.
Barrel ageing is a small, easily-resolved question. Reposado and añejo mezcals are rested in oak, sometimes ex-whiskey barrels, and some coopers use a flour-based paste to seal barrel heads. The residue that could transfer is vanishingly small and no celiac organisation treats it as a real hazard. If you prefer to skip the question entirely, drink joven, unaged mezcal, which is what most mezcal actually is.
How much risk is this?
Celiac disease: mezcal is safe, and it is one of the better spirits to default to when you are out. A joven, 100% agave mezcal with an ingredient list of "agave" is about as low-risk as an alcoholic drink gets.
Non-celiac gluten sensitivity: no issue.
Wheat allergy: no wheat is involved at any point, an advantage mezcal has over wheat-distilled vodkas and gins, where the reasoning depends on distillation rather than on the ingredients.
Cross-contact: the bottle is not the risk; the bar is. A mezcal served with an orange slice and sal de gusano comes with a garnish tray and a shared chopping board. In Mexico, mezcal is frequently served alongside food, and the tortillas are the question, not the drink. Ask for the mezcal neat and skip the communal snack plate.

What to have instead
You do not need to replace mezcal. These are the safe neighbours and the ones worth a second look:
- Mezcal RosalunaGFCO-certified gluten-free, the option if you want a third-party certification mark rather than a category ruling.
- Del Maguey VidaA single-village espadín, widely stocked, and the producer publishes its own explainer on mezcal and gluten.
- Montelobos and IlegalBoth 100% agave espadín mezcals available in most markets, with the short ingredient list the category is built on.
- Any 100% agave tequilaBlanco, reposado or añejo, Beyond Celiac clears tequila explicitly, including mixtos. If mezcal's smoke is not what you want, this is the switch.

Worth a second look rather than avoiding: flavoured mezcals and mezcal liqueurs, canned mezcal cocktails where the mixer is the unknown, and bar-made cocktails in a venue that pours a lot of beer, the shaker and the jigger are the exposure, not the spirit.

Is "mescal" the same as mezcal? Yes. "Mescal" is an older anglicised spelling of the same spirit. It is occasionally confused with mescaline, a completely unrelated compound found in peyote, which has nothing to do with the drink.
Is the worm in mezcal a gluten problem? No. The gusano is a moth larva that lives on the agave plant. Whatever else it is, it is not a grain. Bottles con gusano are largely a marketing tradition rather than a traditional one.
Is a mezcal margarita gluten-free? The spirit is, and so are lime juice and agave syrup. The variables are the orange liqueur (most, like Cointreau, are distilled and fine), and any premade sour mix, which is where an unlisted ingredient could appear. Order it built from fresh juice.
Is sal de gusano gluten-free? It is normally salt, dried chilli and ground gusano, none of which contain gluten. It is also a shared condiment served on a plate in a room full of tortillas, so the practical caution is about the plate, not the recipe.
Does barrel ageing make mezcal unsafe? No. Some barrel heads are sealed with a flour paste, which is the origin of the concern, but no celiac organisation treats barrel-aged spirits as a gluten risk. If it bothers you, drink joven, unaged mezcal is the category standard anyway.
